Who doesn’t love cheesy smashed potatoes? If you’re looking for an easy-to-make yet delicious side dish to add to your everyday dinner menu, look no further. This recipe is sure to convert even the pickiest of eaters.
What Are Cheesy Smashed Potatoes?
Cheesy smashed potatoes! They’re basically potatoes that are baked until they’re super tender, then smashed down and baked again until they’re crispy and golden brown. And the best part? They’re loaded with ooey-gooey melted cheese. Yum!
What Ingredients Are In Cheesy Smashed Potatoes?

- Potatoes – I used baby yellow potatoes. You want a smaller round potato as they will cook evenly and then smoosh down into a little round smashed potatoes.
- Cheese – Gotta have cheese for the cheesy smashed potatoes. I use sharp cheddar as it has a more robust flavor that pairs well with the smooth potato flavor.
- Butter – The butter is applied after the potatoes are smashed and returned to the oven. This will let the seasoning stick and give a little extra flavor.
- Salt, Pepper, Garlic Powder – The seasoning is mixed in with the butter and so that they will stick to the potatoes and flavor them up.
How To Prepare Cheesy Roasted Potatoes?
- Check to see if your potatoes have already been washed. The potatoes I buy have been triple-washed. If they haven’t been washed yet, wash them well.
- Next, spread the potatoes out on a parchment paper lined large sheet pan.
- Place in the oven and cook at 375 degrees for 40 minutes or until fork tender.
- Remove them from the oven and smash them down to 1/4” – 1/2” thick. I use a glass to mash them down.
- Next, melt butter in a microwave-safe dish and mix in salt, pepper, and garlic. Brush the potatoes with the butter mixture.
- Return to the oven at 450 degrees for 10 minutes.
- Remove from the oven and sprinkle with cheese and return to the oven for 5 more minutes.
- Enjoy!
Variations
- Baby red potatoes or any other potato that is approximately 2-3 inches in diameter can be used.
- Sprinkle with a little paprika for a little kick of heat.
- Other types of cheese can be used in place of the sharp cheddar.

Ingredients
- 1 pound baby potatoes
- 1/2 cup shredded cheddar cheese
- 3 tablespoons melted butter
- 1/4 teaspoon salt
- 1/2 teaspoon pepper

Instructions
- Begin by washing and scrubbing the potatoes well. The bag I buy is prewashed.
- Line a large sheet pan with parchment paper and spread the potatoes on the sheet.
- Place in a preheated 375-degree for 40 minutes or until the potatoes are fork-tender.
- Remove from oven and smash the potatoes to 1/4” – 1/2” thickness.
- Melt the butter and stir in the garlic, pepper, and salt. Brush into the smashed potatoes.
- Return to a 450-degree oven for 10 minutes.
- Remove the potatoes from the oven and sprinkle with the cheese.
- Return to the oven and bake for 5 minutes.
- Serve and enjoy!
Notes
- I use baby yellow potatoes, but any small potatoes will work. Baby red potatoes would be excellent in this dish.
- Feel free to use your favorite shredded cheese.
- Instead of the initial baking in the oven for 40 minutes, the potatoes could be boiled for 15 minutes or until fork tender. Continue the recipe by smashing the potatoes.
- Sprinkle on a bit of paprika for a touch of heat.
