One pot lasagna soup is an easy cleanup and less work spin on a family favorite. Lasagna is a staple at our house, but we use so many pots and pans. This is where this lazy lasagna soup recipe comes in.
What Is One Pot Lasagna Soup?
Lasagna soup made in just one pot is fantastic for someone who hates to wash dishes. Everything that makes lasagna so unique is made so much easier. This soup includes lasagna noodles, spaghetti sauce, ground beef, mozzarella, and ricotta.
You need a pot or a saucepan big enough to hold the ingredients. I generally use my Le Creuset 4.5 quart Dutch Oven. (I bought it at an estate sale, and I use it all the time).
What Ingredients Are In One Pot Lasagna Soup?

- Lasagna Noodles – You can’t have lasagna without lasagna noodles, right? However, since most pasta has the same ingredients, you could totally use a different shape for the same taste. Rotini would be good since it has all the crevices the good stuff can get into.
- Ground Beef – I know that some people prefer sausage instead of ground beef. That is completely a personal preference, and sausage could be substituted for ground beef. We buy half a beef yearly, so we generally use ground beef. Splitting the ground beef and sausage 50/50 works too.
- Onion, Garlic, And Spices – Flavor, flavor, flavor
- Beef Broth – Beef broth combined with the sauce allows the noodles to cook in one pot.
- Crushed Tomatoes – Tomatoes are the base for the yummy sauce.
- Tomato Paste – Tomato paste is used to thicken up the sauce.
- Cheese – An absolute must in lasagna. I use mozzarella and ricotta for the cheesy yumminess on top. However, if you are like my youngest and do not like cheese, this can be omitted.
I know it looks like many ingredients, but you may already have most of these items in your pantry. It’s super easy.
How To Make Lasagna Soup?
- In a large pot, brown and crumble the ground beef. After 5 minutes, add the diced onion and minced garlic. Continue cooking until the meat is thoroughly cooked and the onion is translucent.
- Add the broth, crushed tomatoes, tomato paste, and spices to the post. Bring to a boil.
- Add broken noodles to the pot and return to a boil on low-medium heat. Cook until noodles are tender, approximately 20 minutes.
- Mix the ricotta and mozzarella while the pasta is cooking.
- Serve the soup in bowls and top with a spoonful (or a little more) of the ricotta/mozzarella mixture.

How To Store Lasagna Soup?
- Refrigerate leftovers for 4-5 days. Reheating on the stovetop will give the best results, but the microwave will totally work.
- Leftover one pot lasagna soup can be frozen and then reheated in the microwave or stovetop. The texture of the pasta may change slightly, but it is still so good!
What To Serve With Lasagna Soup?
Lasagna soup is hearty enough, but a side salad or garlic bread would go fantastic with this soup recipe.

Ingredients
Soup
- 12 lasagna noodles
- 1 pound ground beef
- 1/2 onion (diced)
- 4 cups beef broth
- 56 ounces crushed tomatoes
- 4 tablespoons tomato paste
- 2 tablespoons Italian seasoning
- 1 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon basil
- 1 1/2 garlic powder
- 1 teaspoon oregano
- 1 tablespoon parsley
Topping
- 2/3 cup ricotta
- 1/2 cup mozzarella
Instructions
- Add the ground beef to a stockpot or Dutch oven. Brown and crumble the meat as it cooks.
- After 5 minutes, add half a dice of onion to the ground beef and continue cooking until the meat is fully cooked and the onion is translucent.
- Drain the excess grease from the ground beef and onion mixture.
- Add the beef broth, crushed tomatoes, tomato paste, and spices to the pot.
- Bring the sauce to a boil on low-medium heat. Add the lasagna broken into bite-size pieces.
- Simmer for approximately 20 minutes or until the lasagna noodles are tender.
- Mix the ricotta and mozzarella.
- Serve the lasagna soup in bowls and top with the ricotta mixture.
- Enjoy!
Notes
- Feel free to substitute Italian sausage for the ground beef or do a 50/50 mixture.
- Parmesan can also be used to top the one pot lasagna soup.
- Freshly shredded cheese is 100% better than pre-shredded cheese. I use my food processor to shred my cheese.
