Queso Fundido Con Chorizo

Description

Queso Fundido Con Chorizo is a cheesy appetizer filled with delicious chorizo and melted cheese. Served on warm tortillas, this dish can also be turned into a main meal.


Ingredients

Units Scale
  • 8 oz chorizo
  • 1 bell pepper
  • 1 onion
  • 2 jalapenos
  • 24 oz chihuahua cheese
  • 12 tortillas

Instructions

  1. Dice the onion, bell pepper, and jalapeños.
  2. Add the diced vegetable to an oven-safe skillet and add the chorizo (casing removed)
  3. Cook the chorizo and vegetables on medium heat, crumbling the chorizo and it cooks.
  4. Once the chorizo is thoroughly cooked and the vegetables are tender, remove from the heat and drain excess grease. 
  5. Reserve 1/4 cup chorizo for garnish, if desired.
  6. Stir in the 24 ounces of chihuahua cheese and place in a preheated 400-degree oven until the cheese is thoroughly melted.
  7. Serve with warm tortillas.

Notes

If chihuahua cheese cannot be found, Monterey Jack could be substituted. 

For a less spicy queso fundido, the jalapenos can be omitted.
