The first time I tried queso fundido con chorizo was at this fantastic Mexican restaurant in Colorado. It was so cheesy and yummy on the tortillas.
What Is Queso Fundido Con Chorizo?
The literal definition translates to melted cheese with chorizo. Very simple but oh so good.
Queso fundido con chorizo is not a “dipping” cheese. This is melted cheese goodness that is scooped and rolled up in a tortilla.
What Are The Ingredients In Queso Fundido Con Chorizo?

- Cheese – Generally, it is made with Mexican cheeses such as Chihuahua or Manchego cheese. I can usually find Chihuahua cheese at Walmart or our local grocery store, which is in a medium-sized town in Missouri, for reference. If you cannot find these types of cheese, you could use Monterey Jack cheese.
- Chorizo – Chorizo is a very highly seasoned ground pork. Emphasis on highly seasoned. For this recipe, we will be using raw Mexican chorizo.
- Onions, Peppers, and Jalapenos – Diced onions, peppers, and jalapenos are cooked along with the chorizo for added flavor (at least we are getting a few veggies in). You can omit the jalapeno if desired.
- Tortillas – This is the vessel to hold all the cheesiness. I use flour tortillas, but corn can also be used.
- Toppings – Although nothing is needed, pico, avocados, cilantro, and diced onion are good choices.
How To Make Queso Fundido?
- A oven-safe skillet is required. I use a cast iron skillet.
- First, dice the onion, bell pepper, and jalapeños. Add the vegetables to the skillet along with the chorizo (casing removed).
- Cook the chorizo and vegetable mixture for approximately 15 minutes until the meat is thoroughly cooked. Crumbling it as it cooks.
- Drain the fat and reserve 1/4 cup chorizo for garnish if desired.
- Mix in the cheese and place in a preheated 400-degree oven. Bake until the cheese is just melted throughout.
- Remove from the oven, garnish with the remaining chorizo, and serve in warm tortillas.

Ingredients
- 8 oz chorizo
- 1 bell pepper
- 1 onion
- 2 jalapenos
- 24 oz chihuahua cheese
- 12 tortillas
Instructions
- Dice the onion, bell pepper, and jalapeños.
- Add the diced vegetable to an oven-safe skillet and add the chorizo (casing removed)
- Cook the chorizo and vegetables on medium heat, crumbling the chorizo and it cooks.
- Once the chorizo is thoroughly cooked and the vegetables are tender, remove from the heat and drain excess grease.
- Reserve 1/4 cup chorizo for garnish, if desired.
- Stir in the 24 ounces of chihuahua cheese and place in a preheated 400-degree oven until the cheese is thoroughly melted.
- Serve with warm tortillas.
Notes
If chihuahua cheese cannot be found, Monterey Jack could be substituted.
For a less spicy queso fundido, the jalapenos can be omitted.
