I am pretty sure that most of you reading this are like me. Cleanup is by far my least favorite kitchen activity. Between shift work and regular life, I am always looking for ways to save time and save creating more work.

In this recipe for one pan healthy sausage and veggies, I used broccoli, zucchini, red onions, and bell peppers. Other vegetables can be used, but care needs to be taken to ensure that they have about the same cooking time.
If you line a large baking sheet with parchment paper, clean up is so much easier. Although, clean up is still super simple even without the paper. Seriously, sheet pan dinners are the BEST!

One Pan Healthy Sausage And Veggies Recipe
Before beginning to prepare the one-pan healthy sausage and veggies, preheat oven to 400 degrees
First, chop the yummy fresh vegetables. In this recipe, I used zucchini, broccoli, bell peppers, and red onion.
Next, toss the chopped vegetables with olive oil, lime juice, garlic powder, black pepper, rosemary, and salt. As always, salt and pepper to your preferred taste.
After the vegetables and seasoning are mixed well, spread the vegetables on a parchment paper-lined sheet pan.
Then slice the turkey kielbasa and spread evenly over the vegetables. Pop the sheet pan dinner into the oven and bake for twenty minutes.
Boom! All done and the cutting board and sheet pan are the only dirty dishes. On the table in less than thirty minutes.

Turkey Sausage and Vegetable Meal Prep Option
When working swing shift, I am always looking for ways to meal prep. Cooking once and having meals for several days is seriously a lifesaver.
To turn this dinner into multiple healthy lunches for work, prepare as directed. Then add one cup cooked brown rice to a container and top with one-quarter of the veggies and sausage. Refrigerate and use within four days.

This Sheet Pan Turkey Sausage and Vegetable dinner is a quick, easy and fast way to get dinner on the table on a busy weeknight. This healthy sheet pan dinner is perfect for meal prep and can be on the table in thirty minutes.
Ingredients
- 16 ounces Turkey Kielbasa
- 2 bell peppers
- 1 onion
- 1 zucchini
- 1 head broccoli
- 2 Tablespoon olive oil
- 1/2 Tablespoon lime juice
- 1 tsp garlic powder
- 1 tsp black pepper
- 1/2 tsp rosemary
- 1/2 tsp salt
Instructions
- Preheat oven to 400 F degrees.
- Chop zucchini, broccoli, bell peppers, and red onion.
- Mix the chopped vegetables with the olive oil, lime juice, garlic powder, black pepper, rosemary, and salt.
- Spread the vegetable mixture evenly over the bottom of a parchment paper lined sheet pan.
- Thinly slice turkey sausage and spread over the top of the prepared vegetables.
- Bake in a preheated oven for twenty minutes.
Notes
Regular Kielbasa can be used in place of the turkey. This substitution will increase the calories and fat in the recipe.
