Pulled pork potato skins are a twist on classic potato skins. Piled high with pulled pork, shredded cheese, BBQ sauce, and green onions.
BBQ pork potato skins are an excellent appetizer for the big game or your next get-together. Store-bought pulled pork can be used in the recipe or my recipe for slow cooker Dr. Pepper pulled pork.
How To Make Pulled Pork Potato Skins?
First, wash the potatoes to remove dirt, then lightly oil and salt the outside. Then, place the potatoes on a parchment-lined baking sheet. Bake for approximately 45 minutes at 425 degrees or until the potatoes are fork-tender.
Next, remove the potatoes from the oven and let them cool enough to handle. Cut the potatoes long ways in half. Gently scoop out the center of the potato, leaving approximately 1/3 inch in the exterior. The scooped part of the potato can be reserved for potato cakes.
Next, melt the butter and brush the inside of the potato.
Turn the oven to 475 and bake for approximately 15 minutes until the inside is browned. Top with shredded cheese and heated pulled pork, return to oven for 5 minutes or until cheese is melted. Garnish with your favorite toppings.

What Potato Is Best For BBQ Potato Skins?
Russet potatoes are the best for loaded potato skins. Choose potatoes that are medium-sized and are all similar in size. This will prevent the potatoes from baking at different times.

Ingredients
- 8 russet potatoes
- Olive Oil
- Salt
- 3 tablespoons melted butter
- 8 oz pulled pork
- 1 1/2 cup shredded cheese
- green onions (optional)
- BBQ seasoning (optional)
- BBQ sauce (optional)
- sour cream (optional)
Instructions
- Wash and scrub potatoes well.
- Pierce potatoes several times with a fork, lightly oil the exterior of the potatoes and lightly salt the outside.
- Place potatoes on a parchment-lined baking sheet and place in a 425-degree oven.
- Bake for approximately 45 minutes, depending on the size of the potatoes.
- Once the potatoes are fork-tender, remove them from the oven and allow them to cool slightly so you can handle them.
- Slice potatoes in half length-wise and scoop out the center, leaving approximately 1/3 inch of the outer potato.
- Bush the insides of the potato with melted butter and return to the oven at 475 degrees for approximately 15 minutes or until the interior is browned.
- While the potatoes are browning, heat the pulled pork.
- Remove from oven and top with BBQ seasoning (or salt and pepper), shredded cheese, and heated pulled pork.
- Return to oven for 5 minutes.
- Top with BBQ sauce, green onions, and sour cream if desired.

- I shred my cheese fresh with my food processor. Freshly shredded cheese is 100% better than packaged shredded cheese.
